INTRODUCTION

The aim of
the course is to allow participants to learn Chinese cooking and its
culture. The course will impart
the basic knowledge of cooking Chinese cuisine. |

COURSE CONTENT |
Module 1 : Introduction to
Chinese cooking and its culture. Knowledge on kitchen rules and regulations;
kitchen structure, facilities and utensils; the ‘Eight
categories’ of
Chinese cuisine Module 2 : Preparation and
storage of ingredients, cutting skills and usage of different ingredients
Module 3 : Knowledge of
basic cooking skills and different ingredients, Module 4 : Preparation of cold and hot dishes; other cooking styles
and preparation of desserts |

CDAC SKILLS TRAINING AWARD SCHEME
*upon successful completion of each module ** upon successful completion
of full course Award holders must achieve at
least 75% attendance and sit for all exams. Those who failed to do so would
have to refund the sponsored amount of $3,000. CDAC sponsorship is
for the course fees. Trainees
must bear additional cost for registration fees, examination fees, uniform
etc. at approximately $250. |
